The Future of Freezing Is Here
Where Science Meets Quality: A New Generation Begins
MAGNETIC FREEZING
Leading a revolution in freezing technology.
PROTON's patented Japanese magnetic freezing technology helps control ice crystal formation and reduce cellular damage during freezing. As a result, it minimizes exudate and weight loss after thawing and better preserves the food's original properties, making the thawed product almost indistinguishable from its fresh counterpart.

PROTON Magnetic Freezing
PROTON freezing technology combines static magnetic fields, electromagnetic waves, and controlled cold airflow to influence the organization of water molecules during freezing. This helps limit the formation and growth of large ice crystals, reducing damage to the cellular structure of food. As a result, taste, texture, and visual appearance are better preserved—even after thawing. It’s a breakthrough that redefines quality in food preservation.

PROTON Europe brings one of Japan’s most advanced freezing technologies to the European market. Unlike traditional systems, PROTON helps preserve food integrity at the cellular level, minimizing weight loss after thawing and better retaining its original organoleptic properties, including taste, texture, aroma, and visual appeal.

PROTON equipment is built for performance and sustainability. Thanks to optimal temperature stability and electromagnetic control, our systems reduce energy consumption while ensuring top-quality freezing — batch after batch.

At industrial scale, every percentage point of thawing loss avoided becomes saleable yield. For a facility processing 10,000 tonnes per year, recovering just 1% represents 100 additional tonnes of product—before accounting for quality premiums or energy savings.

Sashimi Defined the PROTON Mission
PROTON was born in Japan to solve one of freezing’s greatest challenges: preserving ingredients so that, after thawing, they could be served raw with the texture, moisture and quality required for sashimi.

The Evidence Behind PROTON Technology
SCIENTIFIC & TECHNICAL VALIDATION
Ice-Crystal Morphology & Structural Integrity
SMALLER, MORE UNIFORM ICE CRYSTALS
Polarized-light microscopy images provided by Dr. Tadahiko Mizuno show that ice crystals formed during PROTON freezing are substantially smaller and more uniform than those formed during conventional rapid freezing. By limiting the growth of larger ice crystals, this finer and more uniform crystallization helps reduce mechanical disruption of the food structure and supports better preservation of product quality after thawing.
Post-Thaw Biological Function Preserved
Hiramatsu et al., Journal of Parkinson’s Disease, 2022
DOI: 10.3233/JPD-212934
A peer-reviewed study conducted by researchers from Kyoto University and Sumitomo Dainippon Pharma found that iPSC-derived dopaminergic neurospheres cryopreserved using a PROTON Freezer in combination with Bambanker hRM showed favorable post-thaw viability. The cells retained dopaminergic markers, dopamine secretion, and electrophysiological activity equivalent to fresh spheres.
After transplantation into a Parkinsonian rat model, the cryopreserved cells survived, matured into dopaminergic neurons and produced measurable behavioural improvement.
